3/4 cup water
1/2 cup uncooked bulgar
4 cups chopped parsley (approx. 1 large bunch parsely - preferrably chopped by your favorite brother-in-law)
1 cup diced fresh tomatoes
1/4 cup chopped fresh mint
1/2 cup fresh lemon juice
1/4 cup olive oil
2 teaspoons salt
1/4 teaspoon black pepper
In a small saucepan, bring the water to a boil. Add the bulgar and boil for about 1 minute. Turn off heat. Cover and steam-cook for about 5 minutes, or until the water is absorbed. Uncover and let cool.
In a medium-sized bowl, stir together the parsely, tomatoes, mint, lemon juice, oil, salt, and black pepper. Stir in the cooled bulgar and serve. Yum Yum!!!
